One-Pot Cherry Apple Chicken with Napa Cabbage

I’ve been obsessed with my Instant Pot since I purchased it to replace my broken slow cooker about a month or so ago. There’s really no point in putting the thing away as I use it pretty much almost every day (sometimes multiple times a day!) for its speed, convenience and the fact that I’m not heating up my kitchen. I’ve also fallen off the AIP and paleo bandwagon since I completed my Whole30. I’m feeling like crap and it no doubt has to do with my poor dietary choices lately. My HS has even flared up again and so it’s time to pull up the bootstraps and get back on plan. My health will thank me for it!

IMG_1511 So, since becoming obsessed with my IP I’ve been looking for AIP-compliant recipes to make in it, and came across this One Pot Cranberry Apple Chicken with Cabbage from the Paleo Cajun Lady. I didn’t have all of the ingredients on hand and was looking to change up the flavours a bit, so this recipe is an adaptation of her recipe. We also have about 100L of cherries in our chest freezer from the trees in our yard, so I wanted to use those up as well.

One-Pot Cherry Apple Chicken with Napa Cabbage (serves 4-6)

  • 1 Napa cabbage, cored and shredded
  • 2 pounds chicken thighs or breasts (I used 4 skinless, bone-in breasts)
  • 2 apples, cored and sliced
  • 1 small onion, halved and thinly sliced
  • 1 cup chicken broth (bone broth, if you have it)
  • 1.5 cups fresh or frozen cherries
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground mace
  • 1-inch piece of fresh ginger, peeled and finely grated
  • 1/2 teaspoon salt

Place all ingredients in the Instant Pot in the order listed. Cover with lid and ensure the vent is in the sealed position. Select the Poultry setting and press the Adjust button to add more cooking time. It should default to 30 minutes. Now wait while the pot does all the hard work. You can quick release or allow it to naturally release the pressure when the cooking cycle is done. Eat as is or serve with a side of roasted root veggies for a hearty, filling meal.
