Monkey salad 2.0

When I first went paleo I was looking for quick snacks that both the little guy and myself could enjoy (this was before I went full AIP for myself) and I came across this monkey salad from Good Cheap Eats. He loves it, I love it. We ate a TON of it.

Well, things can get boring when you eat them over and over again and sometimes you don’t have all the ingredients on hand – I’m looking at you, cashews! Plus, I was craving something a little different *ahem, with chocolate* and so I threw this beauty together the other day. That’s what’s so wonderful about cooking – you really can be so creative!

Monkey salad 2.0

  • 1 banana, sliced
  • 1 small handful walnuts
  • 2 pieces of your favourite high-quality dark chocolate, chopped (I used ChocoSol)
  • 1 small handful shredded, unsweetened coconut
  • dash of cinnamon

Combine all ingredients in a bowl and enjoy! Healthy fats, healthy carbs and CHOCOLATE. Win. Win. Win.
